Dinanyelys Josefina Quinones

Living the Life as God’s Warrior :: 11.22.74 - 03.02.09

I received the phone call yesterday morning......"Dina is now with Jesus". I had a smile on my lips, but tears in my eyes.

Dina was my sister in law. I loved her like a sister. She was a very vibrant girl, full of energy, loving, compassionate, humorous and she LOVED Filipino food, especially sinigang and hopia (but of course she didn't call it that). Smile Dina, I love you! Gosh I miss her giggles and her jokes.

I was able to spend her last week with her. We told each other how much we love each other. She even cried and kept telling me "I'm Sorry"..... Dina, I understand! One day I was with her, she woke up from a sudden sleep and was looking for a pen. She said "words"...."write words"......"write recipe". I told her, "You know I can cook without a recipe"...she said, "write recipe". So I asked her, "Do you want me to write a recipe book?" And she said "YES". Imagine that!

She also asked me to do some coaching of someone very dear to us. Since Dina's gone to heaven, I have seen changes that are very good. {You know who you are} I hope you feel it too. I feel that my relationship with this person is being rebuilt.... Dina is watching us from heaven. Let's make her proud!

Dina also told me, "This is all a blessing in disguise....and it's all good". I love you Dina! Thanks for being my Angel. And I promise to do what you told me to do....

Dina battled a long journey of ovarian cancer. She was first diagnosed with this devastating disease about 5 years ago. She fought it, long and hard until her very last breath when she couldn't fight it any longer. She was a true warrior. She leaves behind her beautiful 15 year old daughter. Her legacy will live on with her. We've set up a trust fund for Lauressa to be able to go to College. If you wish to donate to Lauressa's trust fund, please GO HERE!

Oysters: True or False?

Oysters should be eaten only in months with "r's" in them - September, October, etc... True or False?

The answer is: FALSE!

Oysters can be eaten 12 months a year. The notion that oysters should not be eaten in "r"-less months-that is, months that occur during warm weather-may have started in the days when oysters were shipped without adequate refrigeration and could spoil. But today all that has changed and we can enjoy oysters 12 months a year!

Locks For Love

Today I did something I have been wanting to do for the longest time. I got a haircut and donated it to Locks for Love! They took 10 inches off! I feel so good and so happy knowing that I may make someone happy for having my hair. :)

Now my hair is just above my shoulders. Short and bouncy and it feels so light. I love it!

For Valentine's dinner, I'm making crab and corn chowder, steamed Dungeness crabs, roasted asparagus and fingerling potatoes. And raspberry cheesecake and praline cheesecake for dessert. Hubby says he'll take me out this weekend....

Vegas Report

Hello!

I am back! I had an awesome time except the flight back home, I caught some kind of virus and I'm all achy and stuffy and coughing real bad. Eeek! Let me give you a run down of how my Vegas get-away went. Warning this is long so grab a cup of coffee/tea or wine (depending on when you're reading this) and put the kids away!

Wednesday - woke up at 5am for a limo pick up 6:30am. Everyone was in deep sleep so we just left and gave the kiddies a kiss and hug. I love waking up early to go on a vacation, don't you? Anyway, the flight there was nice. Got to Vegas at around 10am. Picked up our rental car and drove to the house that we rented. It was 30 minutes out from the strip. Nice house with all the works. Even had a hot tub outside and we had every intention of using it, until we find out later in the week how busy we would be. So needless to say, we didn't get to use it. Got some lunch, freshened up, bought some groceries, then headed out for dinner. We were pretty tired so kept it simple and ate at the Cheesecake Factory.



The next day, woke early to attend the Memory Trends Show. Got there at 9am and we were there until about 5pm. I took two classes, "Embracing Digital Scrapbooking" and "A Photo Can Sell 1000 Products". I got to meet Renee Pearson, author of Scrapbooking Digital and Maria Nerius, a well-known author in the craft industry. We had several make and takes (which I'll show you a picture of once my hubby gets home). They gave us a TON, I mean a TON of stuff from not only the make and takes but they gave us two bags full of goodies....pictures to follow. The classes cost $10 each. And my day pass cost $29. I paid a total of $49 for this event and I got away with over $200 worth of scrapbooking goodies. I kid you not!



We ate at Mesa Grill. We started off with some Blue Corn Pancake with Barbecued Duck and Habanero Chile-Star Anise Sauce and Tiger Shrimp with Roasted Garlic Corn Tamale and Corn-Cilantro Sauce. I had the Grilled Mahi-Mahi with Roasted Pineapple-Cascabel Chile Sauce and Caramelized Pineapple Green Onion Salsa. Hubby had the Pan Roasted Leg of Venison with Crushed Blackberry-Ancho Chile Sauce and Horseradish Potato Gratin. You'll see a copy of the menu here! For drinks I had their classic margarita.



No Bobby Flay but we saw Jerry Seinfeld! He had dinner there too. At first I wasn't sure if it was him. You know when you see these hollywood figure you have this vision that they would be larger than life, but he's just normal looking, dark hair, Jerry's face, in a suit and there he walked in and had dinner with his posse. No one made a big hoorah. But you can see people looking. I wanted so bad to give him a hug and ask for his autograph, but I didn't want to be disappointed just in case he said "no". KWIM?

After dinner, we walked and shopped at the Caesar's Palace. We got home pass midnight.



Friday morning was shopping day. I went to the Fashion Mall (which the name-sake they really did have a fashion show) and also spent the morning checking out different hotels too. I only had time to check out the Venetian, Mirage, Treasure Island and MGM.

Let me give you my short review of each of these hotels. The Venetian has a very romantic flair. This is the place where you can ride the gondola with your sweetie and enjoy the scenery as if you were in Italy. I like the Venetian because of all the hotels I've been in, this hotel didn't have a cigar/cigarette smell. They spray some neutralizer in the air that eliminates all that. The hotel is newer therefore, a lot cleaner. MGM is geared towards families with kids. They have a three-story display of a pair of lion and lioness. I was able to take pictures. Again...to follow. The Mirage and Treasure Island is geared towards the younger crowd. So I think if you were to go with the girls (which I'm planning on sometime in October) this would be the place to go! It has great restaurants and you can go clubbing at Studio 54 afterwards. Speaking of clubs, the less you wear the better! You will get in with no problem. You'll find someone giving out cards so you get a free pass to get in the club. So if you're female, you're in! Well, it probably helps to have other credentials as well. :)



Went home, got ready for dinner. This time it was at Bouchon's. Do you watch Anthony Bourdain's "No Reservations"? Anyway, he went to this restaurant and he gave it a great review so hubby and I wanted to try it out. I had one of my favorite drinks of Rangpur with Tonic and a slice of lime. For appetizers, we had Foie Gras de Canard paired with wine. It was exquisite! This isn't for the light at heart. It's hard core stuff. Hubby and I love to experiment and we have a very exotic palate as you'll find out. Then we had to try the infamous french fries that made Anthony cry. It was the best fries I have ever had. It was cooked to perfection with just the right crispness on the outside and softness on the inside so you can taste the potatoes, not the grease! It was served in a pewter cone lined with white paper. The presentation is incredible. I also had Soupe a l'Oignon, which they claim is the best Onion Soup. I think they were right. When I make this kind of soup, I use cooking sherry so it yields a soup that is of the sweeter taste. I think they used dark red wine with this one as it was deep and rich. It was very pleasant. Then for our main entree we had the Petit Plateau. It was a tower of seafood containing, lobster, shrimp, mussels, clams, and oysters. It is out of this world! The mussels weren't gritty or mucky. Everything had a nice sweet and clean taste to it. Just divine! We passed on dessert and coffee. Now thinking back, I should have went for it. I will definitely go back there again. Saturday morning was the Shot Show with my hubby. It was held at The Convention Center and this show was HUGE! It had over 20,000 booths! It was a very loooong day and it was very tiring! Drove back to the house to rest and got dressed for dinner...I know...again! This time we went to Paris. Ooooh-la-la. And had dinner at the Eiffel Tower Restaurant. It was on the 11th floor and we were seated by the window. We saw the strip from up there. It was a very memorable experience. Here's what our menu composed of: For appetizers we had Black Pepper Marinated Raw Beef, Mustard Aïoli, Extra Virgin Olive Oil, Parmesan and Fricassee of Petits Gris Escargot, Confit Tomato, Wild Mushrooms. For our main entree hubby and I shared Char Broiled Bone in Rib Eye with Bordelaise Sauce, and sided with Pommes Anna. And for dessert we had Grand Marnier souffle. It was the perfect dinner to end the week.

Sunday morning was travel day. I wasn't supposed to leave until 4pm, but I got an early flight and left at 10am. I missed my kids so much! Anywho, that flight was the most horrible ride EVER! It was so turbulent that I thought that was the last time I got to see my husband. It was scary! That shaking and rumbling lasted for a good 4 minutes and let me tell you, it seemed like forever! I sat on the very last row which made it even worst! Then as if that wasn't bad enough, some drunk guy came staggering in the plane and guess where he sat?!?!? YEP! Next to me! UGH! He wreaked like cigarettes and stale beer. I got nauseous. Then now I caught some flu virus and I feel horrible. I hope I start to feel better as I have a very busy week!

Ok, so there's my review of my Vegas get-away. Thanks for stopping by and reading this! Two things I didnt get a chance to do but will definitely try next time I go to Vegas. Go to a spa or two and go to a nice club like Tao. Would you believe I didn't gamble?! I wasn't even tempted, just not my cup of tea. One word of advice, if you're ever planning on going to Vegas, make reservations ahead of time for shows, dinner or anything -- you can do these online! Also, be prepared to see the night life as you've never seen before. I saw a T-girl (that's what they call them!) strolling down the streets of Paris my last night there. Oui-oui!

Mai-Tai Recipe

As you know, I'm having a Cocktail Party on the 29th - you're all invited BTW. Well, if you can't make it, bring the party to you and here's an FANTASTIC Mai-Tai recipe to indulge in. Tried it last night, and it's out of this world! I know someone who'd enjoy this ---- missing me Rene?! {wink}

Mai-Tai

2 oz. Bacardi Rum
3 oz. Mr & Mrs. T Mai-Tai Mix
1/2 oz. Triple Sec
1/2 oz. Orgeat (vanilla flavored liquor)
1/2 oz. Vanilla Syrup
Lime juice to taste

Put all in a shaker with ice. Shake away. Pour in a nice cocktail glass, and DRINK!!!

Mai-Tai

Happy Monday!

DS and I went to Target this morning. They're starting to put all Christmas stuff on clearance! I finally bought a 48" wreath to go over our front door. Gotta love that Target!

If you haven't caught on yet...I love to shop. The funny thing is so does my son. My daughter I can understand....but my son?? I wonder if he'll ever outgrow it. The first thing he always tells me when he wakes up in the morning is "Mommy, can we go shopping now?!" Too funny!

We're having a cocktail party on the 29th, so I'm getting ready and buy all the necessities. You guys wanna come?! {wink}

Eat, Shop & Drink

Hello, Hello!

Last night I went out with the neighborhood girls to do our Annual Eat, Shop & Drink festivities. It's a great way for a night out plus we get to do some shopping and a grab bag to boot! It's a lot of fun things all rolled up into one.

We started off having dinner at Stir Crazy. Had salmon in black bean and teriyaki sauce served with brown rice. Oh yeah, and of course, my mojitos. YUM! After dinner we did our grab bag. We each pick a number out of a hat, then the first person gets to pick a present. The second person, can either pick another present or steals a present that has been opened. The next person then does the same thing until all presents are opened and have a new home. As you can figure out it's best if you're the last person, cause you can have the present you really want and it's not so hot to be the first person, since your present can be stolen from you!

So guess who got #1? The one and only....so I start. I open a small present. Big things come in small packages, you know. And what was it? A nice hand-made jewelry with shells that pick up the color of your outfit. I love it! It's mine. So player #2 goes, What does she do? YEP! She steals mine! Ahhh! I loved what I got...now it's gone. Waah! At the end of the night I ended up with a wine stopper...and if you know me, that is a gift I can totally appreciate! Love my wine, especially reds! {wink} But lately, I have been drinking Rieslings. My favorite the Polka Dot.

After dinner, we did our shopping. We hit up the Gap, Express, Bebe, Macy's. Etc...etc....

So what do you think is next?! Drinks! of course. At The Cheesecake Factory. And of course, we had Snicker's Cheesecake, Chocolate Fudge Cake and Apple Crisp. We all shared!

Oh what a night!

12 Days of Christmas: Day 12

And here we have it the 12th and final day of Christmas. All the guesses were great. However, just not what I had in mind. I gave you a hint.....I tried.....remember, I said? "Now, wait 'til you see what I have for Day 12. It's just the right dose to sweeten all these 11 days of treat I had collected for you. "?

Now, do you have an idea what it is?!?!?!

Here it is....now don't tell me you don't create without snacking on one of these?!?! {WINK} I'll have one packed in with your goodies. You will have a FUN time creating now!

12 Days Of Christmas: Day 1

Starting today and for the next 11 days, I will be putting a FUN treat in our Christmas box. This can be anything from stamping, scrapbooking, eating and anything else our heart desires. Of course, I will post photos of what they are for each day so you can drool over them.

At the end of the twelfth day, I will have my DS pick a name out of a hat. That one lucky person will then get the whole shabang! One big loot of Christmas present all for you.

What To Do With Left-Over Turkey...

I love cooking, did you guess?

So since I've made turkey on Sunday, I've been using it up to make new and fresh dishes. Here's what I've made so far and will be making it looks like for a few more days... I cooked a 12 pound turkey and there's only four of us!

1) Turkey Tetrazzini (we had this for dinner on Monday)
2) Turkey Ala King (we had this for dinner Tuesday night)
3) Turkey Stock (I'm making this right now so I can make soup; and ohhhhh how the house smells so good right now. Nothing beats the aroma of home-cooking!)
4) Turkey Pot Pie (this is for dinner tonight)
5) Turkey Noodle Soup (for dinner tomorrow)
6) Turkey Salad
7) Baked French Onion Soup (will make this using the turkey stock I made)

WOW! How about you, if you made turkey last week, what will you be doing with the left-overs?

I See Polka Dots

What's for dinner? I'm having Herbed Seasoned Roast Chicken {I made the herbed seasoning myself}. Side with acorn squash {holy mother-flippin' squash} - those things are so hard to peel. Maybe I need to come up with a Squash Peeler invention. Also, I prepared asparagus seasoned with garlic, balsamic vinegar and EVOO and rice with black beans and sweet peppers. YUMMMMMM-O!

And look what else I'm having with it --- Well, I can't very well have white meat without my Riesling! {join me?}

My Hallelujah Diet Revelation

They say that you have to do something for at least 30 days until it becomes a habit. Well, I am proud to say that I'm a "JUICE FREAK"! The book " Hallelujah Diet by George Malkmus inspired me to add juicing in my daily food intake. Actually, my friend Pat told me about the book. She's a cancer survivor. YEAY PAT!!! So anyway, since I've been reading this book, and juicing quite a bit, I have lost about 10 lbs. WHOOOOAW I feel good! I juice at least once a day sometimes even up to three times a day. And I snack on fruits and vegies a whole lot; everyday. That coupled with exercise three to five times a week, I'm solid baby! {WINK}

I hope you guys check out this book and adapt some of the practices mentioned on there. Then we can all live a long happy life together! Heehee! But seriously, I have never felt this good in my entire life. And I have been doing this for WAY over 30 days now....way over! No Mommy, Trees Aren't For Eating!

How many of you have children that just wouldn't eat their vegetables? No matter, what you do, what you try, even if you cover it with chocolates, well......no, really, they still wouldn't eat their vegetables. "Broccoli looks like trees and they shouldn't be eaten", that's what my three year old would say. "No way mom!", he protests!

Well, have no fear. Here are some Kid-Friendly Recipe ideas from Christine Steendahl, The Menu Mom. She has some Kid Approved Meals to download. It's your very own personal 13 week breakfast and lunch menu made just for kids!

As Christine states, "kid's meals should be easy, delicious and healthy. Getting children to eat vegetables is a major negotiation. Finding a way to get vegetables into the mouths of babes is easy when they are part of the fun. Coming up with creative ways to get kids involved in the preparation and the cooking of kids' recipes is part of the fun. Child friendly recipes will allow you the peace of knowing your children are eating healthy and they will enjoy feeling in control of what they are being fed."

Following is a sample recipe from The Menu Mom:

Kids Recipes for "Create My Own Soup"

Let your children count the carrots and celery pieces. Let them spell their names with the noodles if you include alphabet noodles. You may find other novelty noodles like car shapes, etc. Create a topic of the soup creation.

Cut star shapes out of the carrot slices and zucchini (using an aspic cutter) then set to the side.

Ingredients:
*1-2 carrots
*1 zucchini
*4 cups low sodium chicken broth
*1/4 cup shaped pasta
*Dash of sage
*3/4 cup chopped, cooked chicken
*Salt and pepper to taste

Bringing it All Together:

*Let the kids help you wash the vegetables. Once finished you can wash the carrots and zucchini softly with a vegetable brush.
*Cut the vegetables into 1/4-inch slices.
*Cut star shapes out of the slices, and set them aside.

*In a medium sized pot, bring the broth to a simmer over medium heat.
*Add the carrot stars and simmer for about 20 minutes or until the carrots are tender.
*Add the pasta, zucchini and chicken. Continue cooking the soup for another few minutes, stirring occasionally, just until the pasta is done. Makes 4 servings.

*Let your kids find their names or count the number of shapes in their soup bowl. The kids will like the adventure and fun, you will feel good knowing they are eating their vegetables.
